Beginning in 2003, the inn initiated the Supper Club dinners
as a celebration of the bountiful fruits, produce, and meats
all available from the local farms of Saratoga and
Washington County.
The combined effort of three friends, Chris O’Meara, Gordon
Sacks, and Tim Cartwright, and the support of their friends,
made the Supper Club dinners a rousing success. The menus
were inspired by the freshest ingredients offered at the
Saratoga Farmers Market that morning. Four courses were
served and paired with interesting wines. Guests arrived
knowing only that a phenomenal experience lay ahead. The
only choice that remained was whether to go vegetarian or
omnivore.
The Supper Club was the dream of three friends who loved
food. Chris and Gordon were childhood friends. Tim and
Gordon had met while at Vassar College. The idea was
simple-serve the best and freshest food possible in a
setting that allowed the cooks to have as much fun as the
guests. Gordon’s dedication to promoting local food and
relationships with local farmers allowed the Supper Club to
have meats prepared the day before an event and fruits and
vegetables picked that morning. Tim’s experience in managing
a successful NYC bistro provided the perfect catalyst and
Chris’ professional cooking talents pulled it all together.
Chris received his training at The Culinary Institute of
America. His formative work experience was gained in San
Francisco where he completed a one-year externship at
Wolfgang Puck’s Postrio, which was followed by a stint with
James Beard Award-winning chef Traci Des Jardins at Rubicon.
O’Meara believes that his California experience opened his
eyes to a vast range of product and influences and that,
fundamentally, Alice Waters’ philosophy of freshness and
seasonality is the proper way to approach cooking. Prior to
coming to Bacon Hill, Chris worked in the kitchen at Bouley
in Lower Manhattan.
Supper Club dinners will continue in 2004 at
Roadhouse 29, a
restaurant and bar recently acquired by the three partners.
